SANTA FE STEAK
Dan's favorite dish at The Pink Adobe in Santa Fe was their Steak Dunigan. Started by Rosalea Murphy in 1944, "The Pink" was a local institution and it was a travesty when it closed its doors in 2013. Thankfully, it has re-opened and the new owners are wisely offering the old menu, including Steak Dunigan and the decadent Rosalea's Legendary French Apple Pie.
This is Dan's version of Steak Dunigan, prepared at the ranch in between Santa Fe visits.

2 NEW YORK STRIP STEAKS
2 cans GREEN CHILES, CHOPPED
1 ONION, CHOPPED
FRESH MUSHROOMS, SLICED THIN
BUTTER
OLIVE OIL
CAYENNE PEPPER
GARLIC SALT
SPRINKLE STEAKS WITH GARLIC SALT AND PEPPER AND GRILL TO MEDIUM RARE
COMBINE ONION, MUSHROOMS, GREEN CHILES AND CAYENNE AND SAUTE IN BUTTER AND OLIVE OIL. SPOON OVER STEAKS.
