BROILED SALMON WITH MUSTARD DILL SAUCE
Another heart, and brain, healthy dish. We ate this a lot in Maine, where we could easily get fresh salmon, which Dan was very particular about.
(Makes 2 servings.)
2 FRESH ATLANTIC SALMON STEAKS OR FILETS
FRESH SPINACH LEAVES
SALT AND PEPPER
1 CLOVE GARLIC
1/4 cup WATER
2 TBSP POUPON MUSTARD
1/2 cup MILK
DILL WEED
SPRINKLE SALMON WITH DILL, SALT AND PEPPER.
BROIL FOR 15 MIN. IN GREASED BAKING THINGY. STIR MUSTARD INTO WARM MILK AND ADD DILL WEED TO MAKE SAUCE.
AT LAST MOMENT, STEAM SPINACH WITH WATER AND GARLIC.
SET SALMON ON BED OF SPINACH AND DRIZZLE WELL WITH SAUCE.
GARNISH WITH A LEMON WEDGE AND SERVE WITH WILD RICE.
