DAN'S LEMON & HERB ROASTED CHICKEN

Dan always managed to get the skin nice and crispy on this one. He would bake the chicken in a large cast iron pot and throw chopped carrots and potatoes in after 30 minutes.

(Makes 4 servings.)

1 ROASTING CHICKEN

1 LEMON 

2 TBSP BUTTER

ROSEMARY

SAGE

TARRAGON

SALT AND PEPPER

 

DUST BIRD LIBERALLY WITH HERBS AND SPRINKLE IN CAVITY.

 

JUICE LEMON AND INSERT SPENT LEMON IN CAVITY.

 

ROAST FOR 1 HOUR IN 350° OVEN, BASTING WITH BUTTER AND LEMON JUICE.
